Squash-Mex Soup – Crock Pot

This is an absolute favorite! Hearty, flavorful, and veggie-filled, it is a great meal to come home to at the end of a busy day.

Ingredients:

2 lbs. Raw Chicken Thighs, trimmed

2/3 Quinoa, rinsed and uncooked

1 14 oz can Petite Tomatoes

1 lb. Butternut Squash, cubed (you can buy this at the store already cubed)

1 Small Sweet Onion, diced

1 14 oz can Black Beans, rinsed and drained

4 Cups Chicken or Veggie Stock or Broth

1 tsp Chili Powder

1/2 tsp Cumin

Directions:

  1. Place all of the ingredients in a slow cooker.  Give it a mix to combine and make sure the chicken is submerged in the liquid.
  2. Cook 8-10 hours on low.
  3. Before serving, remove chicken and shred or dice.  Before retuning to the pot, gently mash some of the butternut squash cubes, leaving some whole.  Return diced chicken to the pot and stir.  
  4. Serve warm in bowls.  Optional toppings include:  Non-fat Greek Yogurt (or sour cream), cilantro, diced green onions, pepitas or crispy tortilla strips.
