Nut Butter Cookies

Nut Butter Cookies

It your sweet tooth is crying out, but you have sworn off of processed sugar and refined carbs, this cookie is the perfect solution.  This one is sweetened with banana only and contains no flour or refined carbohydrates.

Ingredients:

2 Ripe Bananas

1/2 C Nut Butter of choice

1/4 C Water

1 Tlbs. Vanilla

1 C Almond Flour

1 tsp. Baking Powder

1/2 Tsp. Salt

Optional Add-ins: chocolate chips, raisins, dried fruits, chopped nuts

Directions:

  1. Preheat oven to 360 degrees.  Line a baking sheet with parchment paper. 
  2. Peel bananas and add to bowl.  Use electric mixer to mash bananas until mostly smooth.
  3. Add ingredients, nut butter through salt.  Mix to combine.
  4. Add optional add-ins and stir to combine. Pack these with whatever you would like!  If you want chocolate without the sugar, look for zero sugar chocolate chips like Lily’s or opt for a high quality dark chocolate.  
  5. Place spoonfuls of dough on the lined baking sheet.  Dough will be quite loose.  
  6. Bake 12-15 minutes, looking for slight browning at the edges. 
  7. Store cookies in the fridge or freezer.  

This recipe works as a satisfying snack or treat in week 1 of the Powerup and Reset program if you pack it with dried nuts and fruits.  

I keep these frozen and take out a couple at a time to add to kid’s lunches.
