More than once I have heard health experts label Mexican food as #1 on the Do-Not-Eat List if you are trying to eat healthfully. It is a hard case to argue, but I will.

What typically goes wrong with Mexican food is an overload on carbohydrates and fats compared to protein and vegetables. Here is how to create very lean and healthful Mexican meals at home:
- Choose a lean meat and cook with a flavorful seasoning blend.
- Load up on raw or roasted veggies to compliment the meal.
- Offer Salsa as a dressing for salads or binder for bowl meals.
- Use a cupped-handful of beans or rice as your serving of carb.
- Watch your chips. 9 tortilla chips is one serving size. Those nine go fast, are easy to overeat, and are less satisfying than carbohydrates like a corn tortilla or a cupped handful of beans. Consider saving your carbohydrate intake and avoiding the chips all together.
