Lentil Chicken Stew

This Lentil Chicken Stew is warm, hearty, and easy on the stomach.  Loaded with veggies, healthy complex carbs, and protein, it is both cozy and clean.  Perfect for cold weather nights.

Ingredients:

1 T Olive Oli

1-2 Cloves Minced Garlic

14.5 oz Mirepoix Chopped Vegges (or chop your own onion, celery, carrots)

2 tsp. Herbs de Provence

1 lb. Chicken Thighs

4 Cups Chicken Broth

1 Sweet Potato, peeled and chopped into small cubes

1 lb Pre-Cooked Lentils (Trader Joes) or 2 -14 oz cans of Cooked Lentils

2 Large Handfuls Chopped Kale, ribs removed

Directions:

  1. Heat olive oil in a large soup pot or dutch oven.  Add garlic to warm oil and sauté 1-2 minutes.
  2. Add chopped veggies.  Stir and heat while they soften, about 5 minutes.
  3. Add Herbs de Provence and stir to distribute seasoning.
  4. Add chicken and stir through, allowing the chicken to sear just a bit.
  5. Add sweet potatoes.
  6. Pour chicken broth over all ingredients and stir.
  7. Allow the soup to come to a boil.  Cover and simmer 1 hour, until chicken is cooked through and potatoes have softened.
  8. Add lentils and kale.  Stir and heat 10 minutes. 
  9. Remove chicken and shred or chop into small cubes.  Return to the pot and serve warm.

Slow cooker or instant pot options:

Set instant pot or slow cooker on sauté.  Follow steps 1-6.

Set instant pot for 20 min

Set crock pot on low for 8-10 hours or high for 6 hours.

Add lentils and kale at the end of cooking or after releasing the pressure.

Remove chicken and cube or shred, checking for doneness.
