Mediterranean food brings loads of veggies and flavor, but the typical gyro meat is loaded with fat. This Heath-Hero Gyro is here to save the day and bring the flavor without the fat. It can be eaten on top of a salad, in a wrap, or as part of a bowl.
Important note on this recipe! Make the meat the day before or earlier in the day before you plan to eat it. The meat needs to cook and then spend time in the refrigerator before reheating and serving. It makes a perfect option for a pre-prep meal meant to be eaten later.
Ingredients:
3 lb. Ground Turkey and Ground Bison (make the total weight of the meats combined equal 3 lbs. Can be 2 lb. turkey and 1lb. bison or 50/50)
1 Heel Sprouted Ezekiel Bread, processed to crumbs (Can substitute 1 C oats, processed to flour)
2 Eggs
2 Tbsp. Olive Oil
2 T Lemon Juice
6 Cloves of Garlic, minced
2 tsp. Oregano
1 tsp. Thyme
2 tsp. Cumin
1 tsp paprika
1 tsp. Chili Powder
1 tsp Onion Powder
1 tsp Parsley
2 tsp. Sea Salt
2 tsp. Black Pepper
1 Fist-sized Onion, processed to paste
Directions:
- Note – this recipe needs to be made in advance and refrigerated before serving!
- Preheat oven to 400 degrees.
- Line an edged baking sheet with parchment paper and set aside.
- Place ground meats into a large bowl and set aside.
- In a food processor, process the heel of Ezekiel Bread or oats to crumbs.
- Into the food processor, add all ingredients from eggs to Black pepper. Process everything until it is well-combined.
- Dump wet ingredients over ground meats in the bowl.
- Chop the onion into quarters and add it to the dirty food processor. (There is no need to wash the food processor before adding the onion as everything will be added together in the next step.) Process onion until it is a paste.
- Pour onion over meat mixture in bowl.
- Use your hands to combine the meat and processed ingredients until they are well mixed.
- Form meat into a large loaf in the center of the parchment-lined edged baking sheet.
- Bake 30-40 minutes, until cooked through.
- Remove cooked gyro loaf from oven and cool on countertop. Cover and store in the refrigerator overnight.
- To serve, slice the loaf into thin pieces and heat up in microwave or on a baking sheet in the oven.
Serve with:
Basmati rice or chickpeas
Mixed greens or other salad blend
Pickled onions or cabbage
Pita
Hummus
Tzatziki
Simple Tabouleh (chopped grape tomatoes, red onion, parsley, Persian cucumbers)
To Make a Heath-Hero Gyro Burger:
- Follow steps 1-9 above.
- Form meat into patties and place on the parchment-lined baking sheet.
- Bake at 400 degrees for 15-20 minutes, until cooked through and juices run clear.
- Serve in pita or as a burger with tzatziki, hummus, pickled onions, and mixed greens.
