If you want to spend just a few minutes throwing a meal in the crock pot in the morning and come home to a delish dinner, this is a great one for you!
Ingredients:
8-10 Frozen or Raw Chicken Tenders
3 Cans Cannellini Beans, rinsed
1 14oz Jar Salsa Verde
1 tsp. Cumin
4 Cups Chicken or Vegetable Broth
Directions:
- Place all ingredients in slow cooker (even frozen chicken). Stir everything and make sure the chicken is covered in liquid. Set to cook on low for 8-10 hours.
- Before serving, remove chicken and dice or shred and return to pot.
- Serve warm and garnish with avocado and cilantro if desired.
This dish pairs well with: Cruciferous Mexican Coleslaw or a simple salad dressed in Green Goddess Everything Sauce. My husband loves to scoop out this chili with a strainer spoon and eat it in a tortilla!
