Cruciferous Mexican Coleslaw and Mahi Mahi Bowl

Cruciferous Mexican Coleslaw

Cruciferous veggies are on the top of the list for peri/menopausal women, and this coleslaw is a tasty and different way to pump up that food group.

Using the shredded broccoli slaw version makes this coleslaw extra hearty.  It stays well in the fridge, making it a great salad to prep in advance and eat for a few meals. 

Ingredients:

Juice of 1 lime

4 Tbsp White Vinegar

1 Clove Garlic

2 tsp MEXICAN SPICE SEASONING

1 Tbsp. Honey

1/4 C Extra Virgin Olive Oil

Handful of Cilantro, well rinse and chopped

2 Green Onions 

1 Bag of Pre- Shredded Coleslaw Cabbage OR 1 Bag Shredded Broccoli Slaw

Directions:

  1. In a large bowl, mix or whisk together lime, vinegar, garlic, Mexican Spice Seasoning, and olive oil.
  2. Add cilantro and green onions.  Mix.
  3. Add Cabbage or Broccoli Slaw and Mix well.
  4. Saves well in the refrigerator and tastes even better after it has had a chance to chill for awhile before serving. 

Use this Mexican Coleslaw as a side or as part of a bowl.  It is great in Mahi Mahi Bowls.

 Mahi Mahi Bowls

Ingredients:

4 Mahi Mahi Filets

2 Tbsp. Olive Oil

2 Tbsp. Mexican Spice Seasoning

Cruciferous Mexican Coleslaw

Brown Rice

Feta

Black Beans, drained and rinsed

Directions:

  1. Cook Rice according to package directions.  
  2. While Rice is cooking, prepare Cruciferous Mexican Coleslaw.  Chill in refrigerator until serving.
  3. Coat Mahi Mahi pieces with Mexican Spice Seasoning.  You can toss the filets in a bowl with the seasoning, or place them in a large zippered bag with seasoning and shake until they are coated with spice.
  4. Heat Olive Oil in a large skillet.  Add Mahi Mahi pieces and cook covered about 4 minutes per side until no longer pink int middle.
  5. Serve Mahi Mahi, Rice, Beans, Coleslaw, and Feta together in a bowl to taste.
