Everyone’s Favorite Salmon Bowl

Warm and hearty meets crisp and fresh in this delish bowl, making it a go-to family favorite meal.  It is also an easy crowd pleaser that can be made for anywhere from 1-20 people, we know from experience! 

The recipe below will feed about four people, with some leftovers depending on what everyone selects to add to their bowl.  Prep all of the parts and leave them out on the counter, allowing everyone to customize their own bowls. 

Ingredients – 

4, 6oz salmon filets

1 C. Soyaki Sauce Trader Joe’s or Primal Kitchen Island Teriyaki, a no-sugar option

1 Cup Basmati Rice (approx.)

1 Package of Frozen Shelled Edamame 

2-4 Persian Cucumbers

1 C Grape Tomatoes

1 Handful Cilantro

2 Green Onions

Avocado 

Barbecue sauce, check Primal Kitchen for a sugar free option

Directions – 

  1. Heat oven to 400 degrees. Line a 9×13 pyrex pan with foil or a silicone baking mat.
  2. Arrange salmon skin-side down in the pan and drizzle with Soyaki sauce.  Allow this to marinade while the oven heats up. 
  3. Bake Salmon 25 minutes, until cooked though. 
  4. While salmon is baking, prepare Basmati Rice according to package directions.  Keep covered until serving.
  5. Bring a medium pot of water to a boil.  Add frozen edamame and cook in boiling water for 5 minutes.  Drain and keep covered until serving.
  6. Wash and chop vegetables, leaving them arranged on the cutting board.
  7. Once salmon, rice, and edamame are cooked, assemble bowls.  Layer rice on the bottom, followed by salmon, and top with veggies of choice.  Drizzle with barbecue sauce if desired.  

In Perimenopause and menopause, our nighttime carbohydrates are more likely to be stored than used for energy.  Limit your cooked rice to a single serving of one cupped-palm or make a veggie-only bowl.  The protein in this meal will help with mood and brain fog while feeding your muscles.  The great assortment of veggies will help grow a diverse gut.  Both are things we need right now!
