Is this a soup or a chili? You can decide! One thing is for sure, it couldn’t be easier.
This can be made in a crockpot / instant pot / or on the stove top. Because it is so easy, I usually throw it together at the same time I am making another dinner, store it in the fridge over night, and then let it simmer in the crock pot the next day, or quickly heat it through in the instant pot before dinner.
This recipe uses my Mexican Spice Seasoning blend, but can also be made with any taco seasoning of your choice.
Ingredients:
2 lbs. Ground Turkey
1 Onion, diced
3-14 oz Cans Pinto Beans, do not drain
1/3 C Mexican Spice Seasoning or seasoning of your choice
1 4-6 oz Can Diced Chilis, drained, mild or medium according to taste
1 14 oz can Petite Diced Tomatoes, drained
Water (optional)
Directions:
- Brown ground turkey, adding diced onion toward the end to allow onion to soften. This can be done with the sauté setting on the Instant Pot, in a large soup pot if you are cooking this on the stove top, or in a skillet if you plan to cook this in a traditional crock pot with no sauté setting.
- Add all ingredients along with the cooked turkey into the pot, instant pot, or crock pot.
- If you would like this to be thicker, like a chili, do not add any water. For more of a soup, add 1/2 – 1 C of water.
- Heat through *
- For stove top method, bring to a gentle boil and then reduce heat and simmer for 20 minutes.
- For instant pot, cook on manual for 11 minutes. Remember, this will take longer than 11 minutes total. Account for the time needed for the pot to build and release pressure, about 10 minutes on each end.
- To slow-cook, cook on low, medium, or high depending on when you would like to have the dish ready. The ingredients are cooked through, this will just allow the flavors to blend and the soup to warm through
Serve with:
Basic Mex-Seasoned Roasted Cauliflower
NF Greek Yogurt in place of Sour Cream if you would like to make it creamy
Diced jalapeños for those who want extra spice
Warmed tortillas
A salad packed with anything in your veggie drawer like mixed greens, cucumber, grape tomatoes, bell peppers, pipitas, fresh herbs, and dressed with Green Goddess Everything Sauce.
