This salad is loaded with the best of everything crunchy, savory, salty, and healthy! You will become addicted after the first bowl.
Ingredients:
1 Cup Quinoa, cooked
1 15oz can Chickpeas, drained and rinsed
1 English Cucumber, or 4 Persian Cucumbers, diced
2-4 ribs of celery, diced
1/2 Small Red Onion, diced
1 Handfull Fresh Parsley, chopped
1/2 C Pistachios, out of the shell
1 Cup Feta Cheese (can be omitted)
Mixed greens
1 Rotisserie Chicken, removed from the bone and shredded
Dressing Ingredients:
1/2 C Extra Virgin Olive Oil
1/2 C Lemon Juice, fresher squeezed
1 Tbsp Honey (optional)
Directions:
- Cook quinoa as directed.
- As quinoa is cooking, drain and rinse Chickpeas, chop veggies and onion.
- Combine all salad ingredients before mixed greens in a large bowl. Toss to combine. Feel free to keep pistachios, feta, chicken or any other ingredients on the side to allow for individual preferences.
- Mix ingredients for dressing in a jar or dressing shaker.
- Assemble bowls with a base of mixed greens, a scoop of the quinoa salad, top with chicken if desired, and drizzle with dressing.
